Winemaker's Notes

The grapes underwent fermentation in macro bins. This method allows for greater control over the fermentation process, enhancing the extraction of color, flavor, and tannins from the grape skins. Following the primary fermentation, the wine underwent malolactic fermentation. This secondary fermentation process converts the tart malic acid into softer lactic acid, adding a creamy texture and complexity to the wine. The wine was aged for 18 months in 100% French Oak neutral barrels. This aging process allows the wine to develop its flavors and complexity without imparting additional oak characteristics, preserving the integrity of the fruit and varietal expressions.
